Ingredients – 20 pieces
- 1 cup prepared Warrigal Greens
- 1 cup Fresh Basil
- 2 cloves garlic
- Salt & Pepper
- 1 teaspoon Lemon Myrtle
- 1 cup olive oil
- ½ cup Macadamia nuts
- ½ cup finely grated parmesan cheese
- 2 sheets puff pastry
- ½ cup finely grated parmesan cheese
Method
To make pesto:
- Gently roast macadamia nuts
- Prepare warrigal greens by blanching leaves for 3 mins. Drain well.
- Remove basil leaves from the stems.
- Crush garlic
- Blend warrigal greens, basil and garlic in a food processor.
- Add grated cheese, salt, pepper, lemon myrtle and olive oil. Blend.
- Add macadamia nuts and pulse until desired consistency achieved (not too smooth!)
- Taste and adjust seasoning.
To make palmiers:
- Pre heat oven to 220c and grease/line a baking tray.
- Remove plastic paper from puff pastry.
- Spread pesto evenly over the pastry slice.
- Sprinkle half the parmesan cheese over the pesto.
- Tightly roll the pastry into the middle then turn and repeat on the other side.
- Slice the roll into 10 pieces and place on baking tray, face up, shaped like a heart.
- Top with the rest of the parmesan cheese.
- Cook for approx 10-15 mins.
