Ingredients – serves 2
- ½ cup red lentils
- 1 tab oil
- ½ onion
- 1 clove garlic
- small sweet potato
- ½ carrot
- ¼ capsium
- ½ zucchini
- 75g green beans
- Small head broccoli
- 1 tab tomato paste
- 1 can crushed tomatoes
- 1 cup vegetable stock
- Salt and Pepper
- 2 teaspoon smoky paprika
- 2 teaspoon balsamic vinegar
- ½ teaspoon chilli (to taste)
- Fresh parsley
- Rice to serve
Method
- Prepare all vegetables:
- Peel and dice onion
- Peel and crush garlic
- Peel or wash carrot and dice
- Peel sweet potato and dice
- Wash capsicum and dice
- Wash green beans and halve
- Wash broccoli, dice stems and separate florets
- Wash and dice zucchini
- Wash lentils.
- Heat oil and sweat onion and garlic intil soft but not brown. Approx 5 mins.
- Add carrot, sweet potato, zucchini, and capsicum.
- Add tomato paste and stir well for approx 5mins.
- Add balsamic vinegar, paprika, cumin and chilli.
- Add broccoli and green beans.
- Add tomatoes, vegetable stock, salt and pepper and stir.
- Add washed, drained lentils. Stir.
- Bring to boil, cover and simmer for approx. 20 mins untill the vegetables are soft and the lentils are cooked to your liking.
- Serve with freshly chopped parsley and rice.
